Spanish Rice

We have been making this rice in our family for years and it’s definitely requested often as a side dish or a main meal mixed with veggies.

My kids like it for lunch and I enjoy it with eggs and refried beans in the morning. My husband is known to finish any leftovers he may find in the fridge the next day.

And I’m glad they all like it because I enjoy making it. Very often!

This rice is super fluffy, bright orange and can be eaten wherever, whenever by the spoonfuls.

The mix of tomato bouillon and Sazon Goya seasoning gives it a rich authentic taste which enhances the overall flavor of the rice. And the freshly chopped garlic, onion and a dash of cumin will bring out the wonderful aromas as the rice cooks.

Lets get to it…

Ingredients

  • 1 cup long grain rice
  • 2 cups water
  • 1/2 onion, chopped
  • 1 tomato, chopped
  • 3 garlic cloves, finely chopped
  • 2 tbsp olive oil
  • 1 packet Sazon Goya seasoning
  • 1 tbsp tomato bouillon
  • 1 tsp garlic salt
  • 1 tsp cumin
  • dash black pepper

Directions

  1. Saute the garlic and onion in olive oil until lightly brown. Add the chopped tomato, Goya seasoning, tomato bouillon, garlic salt and pepper. Cook for a few minutes.
  2. Add the water and rice and return to a boil.
  3. Set to low, cover and cook for 25-30 minutes.
  4. Turn off and keep the lid on for another 10 minutes. The extra steam will make it super fluffy.
  5. Enjoy by the spoonfuls!
